When Cat was first learning the art of sourdough baking, she apprenticed at a small bread company in the Mission. Mornings were spent baking; afternoons were spent giving away her first 1,000 loaves of bread, in exchange for a chance to preach the gospel of naturally-fermented dough: a tastier, healthier, easier to digest (gluten protein in particular) alternative to commercial yeasted bread. Cat believes the practice of developing your own fermented dough by hand -in pizza, bagels, or artisan loaves- and enjoying it freshly baked, is something everyone should experience. See what the excitement is all about!-

What we'll do

If you've ever dreamt of pulling a fragrant, crusty, naturally-leavened sourdough loaf from your home oven, this class is for you.  We'll discuss starter care and maintenance and then gain practice scaling ingredients, mixing by hand and developing dough strength over a series of stretch and folds. You'll learn the techniques for shaping, scoring and baking artisan quality bread, as well as tips for maintaining your sourdough starter.  Everyone will go home with a professional quality banneton -bread proofing basket- and the bread dough that we develop in class, ready to bake at home the next day. We'll share a warm loaf straight from the oven, plus a sampling of cheese and olives... the perfect end to a sourdough day. BYOB or wine and beer available for purchase. Weekday private classes are also available. Included: - Your own sourdough starter - A loaf ready to bake at home - A professional quality banneton (proofing basket)
