The ancient art of hand-rolled pasta is as easy to learn as it is to enjoy. This is the real thing, made with only a board and a rolling pin, the way my grandmother and her grandmother before her did. Learn to thin out translucent sheets of egg pasta to make noodles of every size as well as shapes like garganelli, corzetti, farfalle and many others. Find out about some of the history and traditions that created this special cuisine. At the end of every class you will be able to enjoy a glass of wine and the good company of other students as we share a meal of the beautiful pasta we have made together. All of our classes are hands on and limited in size so that everyone has plenty of personal attention. We use organic ingredients whenever possible.

One of my earliest memories is of peering up over the edge of the kitchen table to watch my grandmother roll out sheets of pasta dough so thin you could see though them. These she cut with a knife into great piles of golden ribbons that would be our dinner later that night. So, you see, I literally learned to make pasta at my grandmother's knee. That was many years ago and since that time I have passed those skills on to my own children and grandchildren. Now I would love the chance to share them with you.
