This class builds on the skills learned in Pasta 101. We start out by making our own, truly fresh ricotta (once you taste it, you will never go back to the plastic tub!). Then we roll out sheets of tender egg pasta and fill them to make a whole array of stuffed pasta shapes. Some, like ravioli and tortellini, are familiar to everyone; others, such as pansotti and cappelacci may be a new discovery for you. Finally, we open a bottle of wine and enjoy a meal of the beautiful filled pasta shapes we've just created. You will even get to take home a serving or two to share with your own family and friends.
