About Your Host

Jess is a Chef, Cookbook Author, Herbalist, and outspoken food security and agriculture activist. She's the owner of Tin Canyon Farm, an Escargot & Mushroom farm, where she cultivates, cooks, and holds personal retreats. She draws her inspiration from her diverse cultural background, a family history with deep roots in food, and the natural mountain environment that surrounds her.

What we'll do

If you’ve ever thought about making fermented veggies and didn’t know where to start or need (like me) to see it being made in action, this is the class for you. You’ll be supplied with everything you need to make Giardiniera, a traditional Italian relish that’s oh-so-delicious. In this basic class, I’ll show you how to make your Giardiniera; explain how fermentation works, why it’s safe and why it’s so healthy; and recommend books for further fermentation adventures. Fermentation preserves vegetables, increases their nutritional value, saves money, uses very little energy (if any) and tastes delicious. By the end of class, you’ll have one jar of ferment to take home with you (see class sign up for upgrades) and be on your way to making delicious ferments all on your own. Class fee includes food and materials. $50 for Standard Class $75 if you'd like a Home Kit to take with you so you can get started right away!
