Mad for mustard? Fawn over French’s? Pay top-dollar for Dijon? Then this is the class for you! Join Kelly McVicker of McVicker Pickles as she teaches the secrets to preparing homemade mustards that will make you swear off the squeeze bottle for good. We’ll start off the class with a mustard tasting, where you’ll compare flavor profiles and textures and learn how different types of mustard enhance certain foods. You’ll learn why some mustards are sinus-clearingly hot, and why others are mild and mellow. Kelly will discuss flavor pairings that go well together and explain how different mixing techniques create different textures. Each student will then get to mix their own custom mustard choosing from an assortment of spices and herbs. Beer and wine are classic mustard bases, and we’ll have plenty of both to use in our creations (and plenty for drinking, too!) Every student will leave class with two jars of their own custom mustard, plus more recipes for continued mustard making at home. Supplies needed: OPTIONAL: bring a bottle of your favorite beer to use as a base for your mustard. All other ingredients and jars for your mustard creations will be provided in class.
