Discover the art of making artisan, hand-crafted French chocolates at Hot Chocolat with award winning chocolatier, Chef Michael D. Poole. Learn the science of tempering chocolates, acquire the skill of pouring chocolate into molds, and apply your love of art in seeing how to hand-paint chocolates. This is a hands-on class that will give you a better appreciation for the art of making hand-crafted chocolates, and also guaranteed to improve your chocolate making skills.
Learn French techniques for how to make a ganache and molded chocolates in one of our three-hour chocolate-making classes. These are hands-on classes so come ready to work. Kindly wear sneakers or rubber-bottomed shoes to class.

Michael Poole is the founder and CEO of Hot Chocolat, Artisan Firehouse Chocolates, based in Seattle, Washington. Michael is an award-winning chef and has 30 years of experience as a firehouse cook for the Seattle Fire Department. He is a graduate of Le Cordon Bleu, Paris with Le Grande Diplome in Cuisine and Pastry. He specializes in French and Caribbean cuisines, French pastries and artisan chocolates.

In 2003, Michael applied his commitment to excellence and passion for intense flavors to the art of chocolate making. His first flavor was Dark Raspberry Chocolate Ganache enrobed in a White Chocolate Heart. Since then, he has developed over a dozen delicious signature flavors using French recipes and techniques.
Michael Poole has been featured on the nationally syndicated talk show Rachael Ray, as well as local newspapers and television stations.
