Michael Poole is the founder and CEO of Hot Chocolat, Artisan Firehouse Chocolates, based in Seattle, Washington. Michael is an award-winning chef and has 30 years of experience as a firehouse cook for the Seattle Fire Department. He is a graduate of Le Cordon Bleu, Paris with Le Grande Diplome in Cuisine and Pastry. He specializes in French and Caribbean cuisines, French pastries and artisan chocolates.

In 2003, Michael applied his commitment to excellence and passion for intense flavors to the art of chocolate making. His first flavor was Dark Raspberry Chocolate Ganache enrobed in a White Chocolate Heart. Since then, he has developed over a dozen delicious signature flavors using French recipes and techniques.
Michael Poole has been featured on the nationally syndicated talk show Rachael Ray, as well as local newspapers and television stations.
