Moroccan food is diverse, reflecting the influence of many cultures over the centuries, including Berber, Moorish, Arab and French. The heady spices along with the use of fresh fruits and vegetables makes these recipes sing. These recipes are easy to make and will benefit from being prepared ahead. We will make such dishes as: -Fresh Tomato and Caper Salad -Carrot Salad with Orange and Dates -Spiced Chick Pea and Spinach Bstilla -Lamb Tagine with Preserved Lemons and Olives -Couscous -Moroccan Olive Oil Cake This class is part of the Field Kitchen Dinner Tonight series, for beginning-to-intermediate level cooks who want to learn recipes that they can recreate at home. Students will prepare both simple weeknight recipes, and also dishes that can be made ahead of time for busy weeks. Each class will focus on basic knife skills and other techniques that make cooking easier and more pleasurable. About The Field Kitchen: The Field Kitchen is a pop-up cooking school that offers classes in kitchens and on farms throughout the San Francisco Bay Area. About the Instructors: Frances Wilson is a seasoned food professional who taught the professional culinary program at the renowned Tante Maries Cooking School in San Francisco for more than ten years and now teaches at the Silverado Cooking School in Napa. Prior to that, she was the chef at Lalimes restaurant in Berkeley. About Jen Knapp Jen taught recreational classes and led private culinary events at Tante Maries Cooking School for 15 years, in addition to working as a private chef and caterer throughout the Bay Area. She is also certified as a Master Taster with ChefsBest, where she does sensory evaluation of consumer food and beverage products. Frances and Jen are both endlessly curious about food and cooking and enjoy sharing their enthusiasm and knowledge with others. Cancellation policy: A full refund will be issued if we are notified 5 or more days prior to a class. If you cancel a class between 48 hours and less than 5 days, a 50 percent refund will be offered. If you cancel less than 48 hours before the start of a class, we regret that no refunds or credits can be issued, however you are welcome to send someone in your place.
