Welcome to the wonderful world of fermentation. Come taste homemade sauerkraut and learn how to make it. This class will provide basic concepts of fermentation and discuss its health benefits. Class overview: -welcome and fermentation instruction -homemade sauerkraut tasting -where and how to get farm fresh organic produce and spices -overview of tools used -sanitation and kitchen safety -basic knife sharpening and skills -what to expect from from the sauerkraut jar once you're home. Class includes: -organic cabbage and spices -sea salt -cutting boards and knives -pint mason jar filled with sauerkraut for you to take home -instructions and recipe for future home fermentation Venue: This will be held at The Laundry art gallery. More about your Instructor: Natalie Watters will be instructing this course. She has spent the last year between helping get Tigerlily Restaurant started in Berkeley's Gourmet Ghetto and spending the summer as the Chef at Culitna Lodge and Artist Retreat in Alaska. Prior to that most of her cooking experience has been with San Francisco based catering companies that honor sustainability, local ingredients and seasonal produce. Natalie spent two years cooking in Puerto Rico and loves incorporating tropical flavors to her dishes. She is also highly influenced by her mother cooking traditional Chinese food. She is excited to join Josephine, on online platform that connects home cooks with their local community. She has recently done events for San Francisco based Arte y Tapas that throws events bringing together visual artists, musicians and chefs. Some of her favorite cooking experiences has been in the backcountry of California for Back to Earth wilderness excursions.
