Summary
If you love Korean and Japanese food but have been timid about cooking it at home, the best place to start is by learning how to make kimchi and pickles! Fermented pickles are rich in vitamins and minerals and fiber. This workshop features two Asian pickles: - Amazu pickle - Nabak Kimchi (water kimchi with vegetables and fruit ) Sonoko will show you how to make Amazu pickles (rice vinegar based pickle), using an assortment of market fresh vegetables. We will also prepare a chilled water kimchi served with somen noodles. This dish is made with sliced fruit, daikon radish, napa cabbage, ginger and chili pepper and floats in an iced kimchi liquid. She guarantees it will be become your favorite picklish soup! You will learn to prep, taste, and understand the fermentation time. We also will do tastings of the pickles. We will also have noodles to go with our tastings. You will take home the classic pickle to .complete at home Bring an apron, two 1 pint containers with lid (preferably mason jars), your chef's knife and a dish towel. ABOUT THE INSTRUCTOR Los Angeles-based cooking teacher Sonoko has published two cookbooks, The Poetical Pursuit of Food: Japanese Recipes for American Cook (Potter) and Rice Craft (Chronicle Books). Sonoko's third cookbook, Japanese Home Cooking: Authentic Recipes for the Everyday Cook , will be published by Roost Books in the Fall of 2019. She is the founder of Common Grains, a project dedicated to providing a deeper understanding and appreciation for Japanese food and culture.
