Named in honor of “a still for every hill of San Francisco,” Seven Stills is one of the first distilleries across the country to make whiskey from craft beer. Whiskey aficionados can look forward to the Seven Stills collection, a seven-year series that features a new whiskey every year. Named after one of the city’s seven iconic hills, each of these whiskies is distilled from one of Seven Stills’ own proprietary brews and showcases bottle designs from a local street artist. In its second year, the Seven Stills series includes creations like the Rincon Hill–inspired Fluxuate, which is distilled from a coffee porter and offers notes of silky vanilla, roasted malts and robust coffee. In addition to whiskey, the distillery also produces a gluten-free vodka distilled from organic corn and a line of seasonal bitters (think prickly pear and blood orange) made from organic herbs, spices, roots and botanicals. Bay Area locals can pay a visit to Seven Stills’ cool, industrial-chic brewery and distillery in Bayview to experience the distilling magic firsthand. Here, beer and spirits lovers can enjoy guided tours and fun tastings of the brand’s most innovative releases. Take in the expansive new copper pot still (the city’s largest), learn about the production process and sip your way through a range of whiskies for a spirits-forward day you won’t forget.
